Cookies are a classic American tradition, especially close to Christmas. And what’s better than a warm cup of tea with cookies? And what about the smell of the biscuits cooking while the oven warms up the house? Well in Australia it doesn’t work exactly like this as today, the 1st of December, is the first day of summer and inside my house is the same temperature that is inside the oven. I could have put the baking tray on my car’s roof and I would’ve saved money in electricity.
However, I thought about you, on the couch under the blankets with that cup of hot tea, so I faced up the Australian heat just to give you the recipe of these soft, gooey Christmas cookies, so you can take them to your friends’ parties and I promise no one will realise they are actually healthy.
Ingredients:
1 can cannellini beans
100 g Maple syrup
60 g peanut butter (or other nuts)
2 tea spoon vanilla extract
60 g almond meal
3 tablespoon potato starch
1 teaspoon chia seeds
1 teaspoon baking powder
Chocolate chips as desired
Method:
Blend together the beans, the maple syrup and the peanut butter. Put the mixture in a bowl and add the other ingredients. With a spoon, form the cookies and place them in a baking tray. Top with more chocolate chips and Christmas sprinkles. Bake at 180°C for 15 minutes and let them cool down for at least 30 minutes. Keep the left overs (if any!) in the fridge.
