As you already know I’m a big fan of every kind of dessert made with pastry! Every time I make it I think about how much I miss the Italian bakeries , where you can find tens of different biscuits. On the other hand, making pastry on your own gives you the advantage of controlling the ingredients we make it with, and gives the chance to make it way healthier. And this cake has a big plus: it doesn’t require working the dough with the roller and it’s ready in 5 minutes.
Crunchy on the outside and creamy inside, it hides a hearth of hazelnut spread. Perfect for adults and for the little ones for a delicious and healthy afternoon tea, you will fall in love at the first… crumb!
Ingredients:
350g wholemeal flour
50 g potato starch
130 g coconut sugar or raw cane sugar
100 g sunflower seed oil
2 eggs or vegan alternative
1 teaspoon baking powder
30 g cocoa powder
Healthy hazelnut spread of your choice as needed
Method:
In a bowl, mix all the dry ingredients and then add the oil and the eggs. Knead by hand until all the ingredients are well mixed together. Use half of the dough to make crumbs and place them on a cake oven-tray. Press gently with a spoon to make the crumbs stick together. Swirl the hazelnut spread on top and cover with the remaining crumbs. Bake at 180°C for 35 minutes.
